Life’s Whirlwind: What I’m Up To Lately

If you’ve felt like May is a blur, you’re not alone! This month has been an incredible whirlwind, packed with an array of celebrations and significant milestones that always seem to converge as the school year winds down. We’ve been navigating the exciting chaos of a high school graduation, which brings with it a whole new set of emotions and preparations. Then there’s the glamour and fun of PROM, a cherished rite of passage for teenagers. My daughter’s 16th birthday added another layer of festivity, marking a pivotal moment in her journey. On top of that, I had a demanding work trip, and our home has been a bustling hub with various family members coming in and out of town. We absolutely adore playing host; there’s nothing quite like a house full of laughter, stories, and shared meals!

Let’s kick things off with PROM, as it was just last weekend and still fresh in my mind. Our eldest, Carson, is a senior, and Sadie, a sophomore, both had the chance to attend. Seeing them dressed up, full of excitement, and hearing about their wonderful evening filled my heart. It’s a bittersweet experience watching your children reach these significant milestones. Each event is a reminder of how quickly time truly flies. One moment they’re tiny, and the next, they’re embarking on these grand adventures. It makes you want to savor every single moment, because it all GOES BY WAY TOO FAST!

Speaking of special women, Mother’s Day is just around the corner this Sunday, and I want to extend my warmest wishes to all the incredible mothers, grandmothers, aunts, and mother figures out there. May your day be filled with beauty, relaxation, and countless special moments that celebrate the invaluable role you play in the lives of those you love.

As Mother’s Day approaches, I can’t help but reflect on my own amazing mother. Growing up, I was the only girl among five boisterous brothers. This unique dynamic meant I often found myself as my mother’s special confidante and helper, observing her every move with admiration and learning from her quiet strength.

I distinctly remember watching and admiring my Mother, particularly in how she loved and nurtured us all. She had an incredible way of making everyone feel seen and cherished. It seemed she was always in the kitchen, the heart of our home, and I was her eager little partner, her shadow, her sidekick. I can still recall, as if it were yesterday, the exhilarating rush of running home from school, greeted by the comforting, warm, and utterly delicious smells of freshly baked bread wafting from the kitchen. Those weren’t just ordinary loaves; they were infused with her love. She somehow made ordinary days feel truly extra special, transforming routine into moments of connection and joy with her culinary magic and unwavering presence.

When my Mom was cooking or baking, I was almost always right there beside her, observing her every move, soaking in her techniques and wisdom. I learned so much – from how to knead dough to the perfect temperature for pies. But more profoundly than any specific recipe or method, I observed her genuine joy from making food for her family. It wasn’t just about preparing meals; it was a deeply selfless act of service, a profound expression of love, and her beautiful way to bring our busy family together around the table. Those moments in the kitchen shaped my understanding of what a home should feel like.

I wanted to be just like her. My greatest aspiration was to create a home that mirrored hers – one overflowing with love, where the door was always open, and visitors, friends, and family were not just welcomed, but embraced with open arms and a comforting meal.

If you have the immense pleasure of knowing my Mom in real life, you’ll undoubtedly agree: she is a real-life angel. Her generosity and boundless energy are legendary. I often refer to her as the Energizer Bunny because at 81 years young, she simply doesn’t stop! Her days are filled with purpose, always centered around helping and serving others. Whether it’s baking fresh bread for a neighbor in need, dropping off a comforting meal to a friend, or contributing her incredible talents, she is ceaseless. Whenever she comes to my test kitchen to assist me with recipe development – a joy we share – she always leaves with containers of food, not for herself, but to deliver to those who could use a little extra love and sustenance. Her selflessness is truly inspiring.

If you were to ask me to describe my Mom in just a few words, I would undoubtedly say she is…kind, giving, wise, empathetic, funny, selfless, classy, incredibly talented, beautiful both inside and out, and a true peacemaker. Her character is a mosaic of virtues that have profoundly influenced who I am today. I am beyond thankful, every single day, for her beautiful example, her enduring love, and the incredible legacy she continues to build. She truly is my greatest inspiration.

Current Obsessions: Things I Am Absolutely Loving

There’s nothing quite like the satisfaction of harvesting your own food, and we just had the pure delight of picking our first fresh garden tomatoes of the season! This is always such an exciting moment for us, especially because, as many of you know, we call Arizona home, and it gets ridiculously, unforgivingly HOT here. Growing anything in this desert climate feels like a small victory, but our tomatoes always thrive and bring us immense joy.

Inspired by this fresh bounty, I whipped up an incredibly easy yet elegant appetizer yesterday. I simply tossed the vibrant tomatoes in a generous drizzle of high-quality extra-virgin olive oil, a sprinkle of flaky sea salt, freshly ground black pepper, plenty of fresh basil from the garden, and a touch of sweet balsamic glaze. I then paired this exquisite tomato mixture with creamy, decadent burrata cheese. To complete the experience, I toasted some slices of crusty French bread with a whisper of butter, serving it alongside the burrata for perfect scooping. This appetizer is an absolute dream – it’s such an easy, refreshing summer appetizer that bursts with the flavors of the season. Perfect for entertaining or a simple weeknight treat!

Tip for Fresh Herbs & Pantry Staples:

If fresh basil isn’t thriving in my garden at a particular time, or if I’m in a pinch, I always make a point to pick up a large, potted basil plant at Trader Joe’s. It’s an absolute game-changer! Not only is it incredibly fresh, but it’s also significantly less expensive than buying those tiny, often wilted, packages of basil at the regular grocery store. Plus, having a live plant means fresh basil on demand for days!
