  • 1/2 Tablespoon Oyster or Fish Sauce (optional)
  • 8 ounces Rice Noodles, Spaghetti, Buckwheat, Soba, Pad Thai Noodles, Udon Noodles (cooked according to package instructions)

Instructions

  • In a large skillet, add oil over medium-high heat. Add finely diced vegetables and cook for 3-4 minutes until slightly tender-crisp. Set aside.
  • While vegetables are cooking, prepare the stir-fry sauce. In a small bowl, whisk together soy sauce (or tamari), brown sugar, chili garlic sauce, minced ginger, sesame oil, and optional oyster or fish sauce until well combined.
  • Bring a pot of salted water to a rolling boil. Cook your chosen noodles according to the package instructions until al dente. Drain thoroughly.
  • Return the cooked vegetables to the skillet over medium heat. Pour in the prepared stir-fry sauce and toss to coat the vegetables evenly.
