  • 2 large Eggs
  • 2 large Egg Yolks
  • 1/4 cup Brown Sugar
  • 1/4 cup Sugar
  • 1/4 teaspoon Salt
  • 3/4 cup Cake Flour
  • 1 1/2 Tablespoons Unsalted Butter (melted)
  • 1 1/2 teaspoons Vanilla Extract

Ice Cream:

  • 2 2/3 cups Whole Milk
  • 2 cups Heavy Cream
  • 3/4 cup Brown Sugar
  • 3/4 cup Sugar
  • 1/4 cup Light Corn Syrup
  • 1/2 teaspoon Salt
  • 1 Tablespoon + 2 teaspoons Cornstarch
  • 2 ounces Cream Cheese (very softened)
  • 1 1/2 to 2 cups Caramel (from a jar…I use Trader Joe’s)

  • Preheat oven to 350 degrees F (175 degrees C). Butter the bottom of a 9-inch cake pan or spray with non-stick cooking spray. You can also line the bottom with parchment paper for easy removal.
  • In a large bowl, beat the eggs, egg yolks, brown sugar, granulated sugar, and salt for 8-10 minutes until the mixture is very light and fluffy. Gently fold in the cake flour. Then, fold in the melted butter and vanilla extract until just combined.
  • Pour the batter into the prepared pan and bake for 13-16 minutes, or until lightly golden and a toothpick inserted comes out clean. Let the cake cool completely. Once cooled, cut it into very small squares and place them in a bowl. Toss the cake pieces with 3/4 cup of caramel sauce until they are completely coated.

  • In a medium saucepan over medium-high heat, combine the whole milk, heavy cream, brown sugar, granulated sugar, and light corn syrup. Bring the mixture to a boil and boil for 4 minutes, stirring frequently. Watch carefully as it may expand and spillover.

  • Pour the hot mixture into a 1-gallon Ziploc freezer bag and seal it tightly. Submerge the sealed bag into an ICE BATH (a large bowl filled with ice and water). Let stand for about 30 minutes, adding more ice if necessary, until the mixture is thoroughly chilled.
  • Pour the chilled ice cream base into your ice cream maker and turn on the machine. Continue to churn according to manufacturer’s instructions until the ice cream is thick and creamy, resembling soft-serve.
  • To assemble, scoop some of the freshly churned ice cream into a freezer-safe storage container. Layer it with portions of the caramel-coated gooey butter cake pieces.
