What Makes This Stuffing So Classic and Delicious?

The magic of this Thanksgiving stuffing lies in its carefully selected ingredients, each playing a vital role in creating a symphony of flavors and textures. It’s a recipe that perfectly balances tradition with a touch of fresh, vibrant elements. Here’s a closer look at the key components:

  • Hearty Bread: The foundation of any great stuffing, providing texture and absorbing all the delicious liquids.
  • Savory Breakfast Sausage: Adds a rich, meaty depth and a hint of spice.
  • Aromatic Onions: Caramelized to perfection, they bring a foundational sweetness and savory base.
  • Rich Butter: Essential for sautéing and enhancing the overall flavor.
  • Fresh Celery (Optional): Contributes a subtle crunch and earthy note.
  • Crisp Fresh Apples: Offers a bright, sweet, and slightly tart contrast to the savory elements.
  • Sweet and Tart Dried Cranberries: A burst of fruity flavor and a beautiful color accent.
  • Fresh Herbs (Sage & Parsley): Impart classic Thanksgiving aromas and a fresh, herbaceous finish.
  • Flavorful Chicken Broth: Moistens the bread and infuses the stuffing with rich flavor.
  • Eggs: Act as a binder, helping the stuffing hold its shape and ensuring a tender interior.
  • Seasoning (Salt and Pepper): To perfectly enhance all the ingredients.

Choosing the Best Sausage for Your Stuffing

The type of sausage you select can significantly influence the overall flavor profile of your Cranberry Apple Sausage Stuffing. For this recipe, I highly recommend using a high-quality breakfast pork sausage, typically found in a rolled package. Brands like Jimmy Dean offer excellent options, with both regular and hot varieties available.

If you prefer a milder, more classic flavor, the regular breakfast sausage is ideal. However, for those who enjoy a bit of a kick, opting for hot sausage will introduce a subtle spiciness that beautifully complements the sweetness of the apples and cranberries. Ensure the sausage is thoroughly cooked and crumbled before adding it to your stuffing mixture. This step is crucial for developing flavor and ensuring food safety.

Selecting the Perfect Apples for Stuffing

The apples in this recipe aren’t just for sweetness; they provide a delightful texture and a refreshing tartness that cuts through the richness of the sausage and bread. When choosing apples, look for varieties that are firm, crisp, and offer a balance of sweetness and tartness. My top recommendations include Gala, Fuji, Honeycrisp, or even Granny Smith if you prefer a more pronounced tart flavor.

Whether you peel the apples is entirely up to your personal preference. I usually peel them before dicing them into bite-sized pieces, as this ensures a smoother texture in the stuffing. However, leaving the peels on can add a rustic look and a bit of extra fiber. Dice them uniformly so they cook evenly and integrate well into the stuffing.

What Kind of Bread Works Best for Stuffing?

The bread is the backbone of any great stuffing, and its quality and texture are paramount to preventing a soggy or dry outcome. While there are many debates about the “best” bread for stuffing, my experiments have consistently led to two clear winners for this Cranberry Apple Sausage Stuffing:

First, a high-quality, substantial white sandwich bread. Forget the flimsy, inexpensive loaves. You need a bread that has enough density to hold its structure when moistened with chicken broth, rather than dissolving into mush. Brands like Arnold, Oroweat, or Sara Lee Artesano gourmet bread are excellent choices that prove hearty enough for the task.

Alternatively, a robust French bread is an exceptional contender. French bread is typically much heartier than standard white bread, which means it might result in a slightly chewier, more rustic texture and a wonderfully crispy crust when baked. I prefer to cut French bread into slightly larger cubes (around 3/4 inch) to ensure they stand up well against the broth and provide a satisfying bite.

Challah bread also offers a fantastic alternative. While it possesses a subtle sweetness, its dense texture allows it to absorb the broth beautifully without becoming overly soft. Whichever bread you choose, remember that drying it out slightly overnight or by toasting in the oven beforehand is a critical step. This ensures the bread can absorb maximum flavor without becoming waterlogged, leading to that coveted balance of moist interior and crispy exterior.

This Cranberry Apple Sausage Stuffing isn’t just a recipe; it’s an ode to classic Thanksgiving flavors. You simply can’t go wrong with a classic done right! I’m excited to share all my secrets to achieving the most flavorful and perfectly textured Thanksgiving stuffing, ensuring your dish is moist, aromatic, and absolutely irresistible.

Our journey to this perfect Cranberry Apple Sausage Stuffing begins with browning the sausage until it’s wonderfully crisp and then caramelizing onions in rich browned butter. This foundational step is key to building a deep, complex flavor profile. The hearty sausage provides a satisfying texture and savory backbone, while the addition of crisp, tart Granny Smith apples introduces a welcome touch of sweetness and freshness that balances the dish beautifully.

Generous amounts of fresh herbs, particularly sage and parsley, are incorporated to elevate the stuffing with their earthy, aromatic notes, bringing that undeniable “freshness factor.” The combination of savory chicken broth and eggs works to keep the stuffing incredibly moist and tender on the inside, preventing it from drying out. The finishing touch comes from plump dried cranberries, which contribute a delightful tart-sweet burst of flavor and a vibrant pop of color, making every forkful a joy.

Achieving the perfect texture in your stuffing often comes down to how you prepare the bread. The photo below illustrates my preferred method for cutting the bread into substantial, bite-sized pieces. Larger cubes are ideal as they retain their shape better and absorb the broth without becoming mushy, contributing to a more satisfying, less uniform texture that’s both moist and slightly chewy.

This versatile Cranberry Apple Sausage Stuffing offers flexibility in how it’s cooked. You can choose to prepare it traditionally inside your holiday turkey, or for a simpler approach, bake it in a dish in the oven. While stuffing cooked inside the bird often yields a slightly moister result due to absorbing turkey juices, I’ve perfected this recipe to ensure it remains wonderfully moist and tender even when baked separately in the oven. This makes it an excellent option for those who prefer to cook their stuffing outside the turkey or need extra servings.

Rest assured, this Cranberry Apple Sausage Stuffing is a guaranteed hit. It’s the kind of dish that my entire family devours with enthusiasm, and I’m confident it will be a crowd-pleaser at your holiday table as well. Its rich flavors, appealing textures, and comforting warmth make it an essential part of any festive meal.

Total Time:

Servings:

Equipment

  • Emile Henry 9 x 13 baking dish
  • Mixing bowl set
  • Measuring cups and spoons
  • Spatula set
  • 12 inch cast iron skillet

Ingredients

  • 1 (16-ounce) pkg. Breakfast Sausage
  • 2 Onions, chopped
  • 1/2 cup Celery, chopped (optional)
  • 6 Tablespoons Butter
  • 2 Granny Smith Apples, peeled and diced
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 12 cups French Bread or High-Quality White Sandwich Bread, cut into 3/4 inch cubes (about 1 1/2 lb. full loaf)
  • 1 1/2 teaspoons Sage
  • 1/2 cup Fresh Parsley Leaves, diced
  • 2 cups Chicken Broth (may add more if you want a moister stuffing)
  • 3 Eggs
  • 1/2 cup Dried Cranberries or Cherries
  • 2 Tablespoons Melted Butter (optional, to drizzle on top of stuffing)

Instructions

  1. Cook sausage in a large skillet over medium heat until browned and fully cooked. Remove from pan and set aside, draining any excess grease.
  2. In the same skillet (or a clean one), heat 6 tablespoons butter over medium-high heat. Add chopped onions and celery (if using) and cook for 15-20 minutes, stirring occasionally, until the onions are golden brown and caramelized. This step is crucial for deep flavor.
  3. Add the diced apples to the onion mixture and continue to cook for another 5 minutes, allowing them to soften slightly. Transfer this mixture to a very large mixing bowl.
  4. Add the bread cubes, sage, and parsley to the large bowl with the apple-onion mixture. Gently stir to combine all the dry ingredients.
  5. In a small separate bowl, whisk together the chicken broth and eggs until well combined. Pour this liquid mixture evenly over the bread cubes in the large bowl. Stir in the dried cranberries and the cooked sausage. Gently toss all ingredients until thoroughly mixed, ensuring the bread is well coated but not mashed.
  6. Preheat your oven to 350 degrees F (175 degrees C). Stuff your turkey cavity with the stuffing mixture, or for oven baking, transfer the stuffing into a greased 9 x 13 inch baking pan. For an extra golden crust and rich flavor, you may optionally drizzle 2 tablespoons of melted butter over the top of the stuffing before baking.
  7. Cover the baking pan tightly with aluminum foil. Bake for 30 minutes. After 30 minutes, remove the foil and continue baking for another 10-14 minutes, or until the top is golden brown and crispy, and the stuffing is heated through to an internal temperature of 165°F (74°C).

Notes

What type of sausage to use in stuffing?

You can use your favorite type of breakfast pork sausage. I suggest the breakfast sausage in a rolled package, such as Jimmy Dean regular or hot sausage. If you desire a little heat in your stuffing, hot sausage is a great choice.

What type of apples to use?

I suggest using a firm, crisp, yet sweet apple in this stuffing recipe for the best balance of flavor and texture. Gala, Fuji, or Honeycrisp apples work beautifully. You can leave the peels on for a rustic touch or remove them, depending on your preference. I typically peel the apples before dicing them into bite-size pieces.

What type of bread should I use in stuffing?

The choice of bread is crucial for excellent stuffing. After testing several options, I recommend a high-quality white sandwich bread (like Arnold, Oroweat, or Sara Lee Artesano gourmet bread) or a hearty French bread. These types are substantial enough to absorb the chicken broth without becoming soggy. Challah bread is also a good alternative, offering a slight sweetness and dense texture. My personal favorite is French bread, as its heartiness lends itself to a crispier crust and I like to cut it into larger pieces for a more robust texture.
