Ingredients

  • 1 teaspoon Olive Oil
  • 1 Onion, diced
  • 3 Garlic Cloves, diced

  • 6 cups Chicken Stock (add 2 more cups if you prefer a “brothier” soup)
  • 1 to 2 teaspoons Salt, to taste
  • 1 teaspoon Pepper, to taste
  • 1 1/2 lb. Chicken Tenderloins or Chicken Breasts (or pre-cooked rotisserie chicken)
