A Taste of Tradition: Our Family’s Beloved Easter Pie
For my family, Easter has always been a momentous occasion, a tradition filled with warmth, laughter, and an abundance of delicious food. My Mom had a magical way of making it extra special, often culminating in an annual Easter Egg Hunt at my Grandma’s picturesque house on Camelback Mountain. With our large extended family, everyone contributed a cherished dish to a grand potluck, resulting in a spread so vast it could feed a small army!
Amidst the impressive array of savory and sweet offerings, one dessert consistently held a place of honor: the Strawberry Cream Pie. Its arrival on the table was met with eager anticipation, and it was invariably devoured by my cousins and me within mere minutes. This pie wasn’t just a dessert; it was a symbol of spring, family, and pure, unadulterated joy. It’s this treasured memory that inspired me to perfect and share this recipe, ensuring that others can create their own sweet traditions.

The Foundation of Flavor: A Buttery Cookie Crust
The secret to this Strawberry Cream Cheese Pie’s irresistible charm begins with its crust. Forget complicated pastry; this pie features a remarkably simple yet utterly divine NILLA Wafer cookie or graham cracker crust that truly sets it apart. It’s a game-changer for those who appreciate ease without compromising on taste.
Crafting this crust is a breeze. It’s a harmonious blend of finely crushed NILLA Wafer cookies (or classic graham crackers), rich melted butter, and a touch of granulated sugar. I particularly love using vanilla-flavored wafers or graham crackers because their inherent sweetness and subtle vanilla notes infuse the crust with an incredible depth of flavor that complements the creamy filling beautifully. This mixture is then pressed firmly into a pie pan and briefly baked for just 10 minutes. This crucial step not only helps the crust hold its shape but also imparts a delightful toasted aroma and prevents it from becoming soggy when the creamy filling is added. After this quick bake, the rest of the pie-making process is entirely no-bake, making it incredibly convenient and ideal for warmer weather.
The crisp, buttery foundation provides the perfect contrast to the smooth, cool filling, creating a symphony of textures and tastes in every bite. It’s a testament to how simple ingredients can come together to form something truly spectacular.

Essential Ingredients for Your Strawberry Cream Cheese Pie
This delightful dessert relies on a handful of accessible ingredients that, when combined, create a truly memorable flavor profile. Here’s what you’ll need to assemble this magnificent pie:
- **For the Crust:**
- Graham Crackers or NILLA Wafers: The choice is yours for a classic or vanilla-infused base.
- Unsalted Butter: Essential for binding the crumbs and adding richness.
- Granulated Sugar: A touch of sweetness to balance the crust.
- **For the Sweet Cream Cheese Filling:**
- Cream Cheese: Ensure it’s full-fat and softened for a smooth, luscious filling.
- Granulated Sugar: To sweeten the cream cheese to perfection.
- Heavy Cream: Whipped to create a light, airy, and stable filling.
- Vanilla or Almond Extract: For an added layer of aromatic flavor.
- **For the Glazed Strawberry Topping:**
- Fresh Strawberries: The star of the show, providing vibrant color and natural sweetness.
- Strawberry Jam: Used to create a simple, shiny glaze that enhances the berries.
The magic truly happens with the filling and topping. The creamy interior is a velvety concoction of softened cream cheese, granulated sugar, rich heavy cream, and a hint of either almond or vanilla extract. The choice of extract subtly alters the flavor profile; vanilla offers a classic, comforting note, while almond provides a more sophisticated, slightly nutty undertone. Once chilled to perfection, this smooth filling is generously crowned with beautifully sliced fresh strawberries. These berries aren’t just placed on top; they’re gently tossed in a warm, shimmering strawberry jam. This simple glazing technique not only amplifies the natural sweetness of the strawberries but also gives them an incredibly appealing glossy finish, making each slice a feast for the eyes as well as the palate.
This Strawberry Cream Pie, with its crunchy graham cracker or cookie crust, is a non-negotiable staple on our Easter dessert table and a year-round favorite. Its striking beauty is matched only by its perfectly balanced sweet and creamy taste, making it an absolute showstopper.

Crafting Your Strawberry Cream Cheese Pie: Step-by-Step Guide
Creating this stunning Strawberry Cream Cheese Pie is a straightforward and enjoyable process. Follow these detailed steps to achieve a dessert that’s both easy to make and utterly delicious:
- Prepare the Buttery Cookie Crust: Begin by preheating your oven to 350°F (175°C). The easiest way to create fine crumbs from NILLA Wafer cookies or graham crackers is in a food processor. If you don’t have one, simply place the cookies or crackers in a large Ziploc bag and crush them with a rolling pin until uniformly fine. In a medium bowl, combine these fine crumbs with the melted butter and ¼ cup of sugar, mixing thoroughly until well combined. Press this mixture firmly and evenly into a 9-inch pie pan, covering both the bottom and sides. You can use the bottom of a measuring cup or your knuckles to ensure a compact crust. Bake the crust for 8-11 minutes, which helps it set and prevents sogginess. Once baked, set it aside to cool completely to room temperature before adding the filling.
- Whip Up the Creamy Filling: For the filling, ensure your cream cheese is slightly softened. This is crucial for achieving a smooth, lump-free consistency. In a large mixing bowl, using a stand mixer or a hand mixer, beat the softened cream cheese and ½ to ¾ cup of sugar together for 2-3 minutes, until the mixture is light, fluffy, and well combined. Scrape down the sides of the bowl, then add the heavy cream and ½ to 1 teaspoon of vanilla or almond extract. Continue to whip the mixture for at least 4 minutes, or until stiff peaks begin to form. The filling should be thick enough to hold its shape and be pourable into the pie crust.
- Chill for Perfection: This is a vital step for ensuring your pie sets beautifully. Once your filling is prepared, place it in the refrigerator to chill for at least 1 hour. This initial chilling helps the mixture firm up. After an hour, carefully pour the chilled filling into your cooled pie crust. Return the pie to the refrigerator to continue chilling until you’re ready to serve. For an extra firm pie that cuts cleanly, you can place it in the freezer for 30 minutes to 1 hour before serving.
- Create the Glazed Strawberry Topping: Just before serving, prepare your vibrant strawberry topping. Warm ¼ cup of strawberry jam in the microwave for about 20 seconds, or until it’s fluid and easy to work with. In a separate bowl, gently toss your sliced fresh strawberries with the warmed strawberry jam until they are evenly coated and glistening. Arrange these beautiful glazed strawberries artfully over the chilled cream cheese filling. Return the pie to the refrigerator briefly until it’s time to slice and serve.

Sweet Cream Cheese Filling:
- (1) 8-ounce pkg. Cream Cheese (softened)
- 1/2 – 3/4 cup Sugar
- 1 1/4 cup Heavy Cream
- 1/2 – 1 teaspoon Vanilla or Almond Extract

- 1/4 cup Strawberry Jam (heated)
Instructions
To make Crust:
- Preheat oven to 350 degrees F (175 C). Grind the NILLA wafers into fine crumbs in a food processor. If you don’t have a food processor, place in a large Ziploc bag and crush with a rolling pin until there are fine crumbs.
- In a large bowl, mix fine crumbs, melted butter, and sugar until well combined. Press into a 9-inch pie pan, covering the bottom and sides. Press the crumbs in very tightly (you may use the bottom of a measuring cup). Bake the crust for 8-11 minutes. Set aside to cool completely.

- In a large mixing bowl, whip cream cheese and sugar for 2-3 minutes, or until the mixture is light and fluffy. Add vanilla or almond extract.
- In another bowl, whip the heavy cream until stiff peaks form. Carefully fold into the cream cheese mixture. Let filling chill in the refrigerator for 1 hour.
- Pour chilled filling into the cooled pie crust. Let chill in the refrigerator until ready to serve. If you want the pie to be firmer, place in the freezer for 30 minutes to 1 hour.
