A Crowd-Pleasing Creation: My Family’s Seal of Approval

Creating new recipes for friends and family is one of my greatest joys. However, before any recipe makes it out of my kitchen, it must first pass the ultimate taste test: my husband and children. They are my most honest critics, and their feedback is invaluable. They never hold back, and I wouldn’t have it any other way!

When I first developed these Pesto Parmesan Sundried Tomato Tartlets, I eagerly awaited my kids’ return from school. They’ve become accustomed to the delicious suspense of discovering a new treat waiting for them. As each child walked through the door, their eyes lit up at the sight of the mini tartlets. One by one, they each grabbed a tartlet, taking a hesitant bite before their expressions melted into pure delight. Then, the “oohs” and “aahs” began, followed swiftly by requests for seconds, and even thirds!

That’s my unmistakable sign. If a recipe only warrants a single taste, it’s back to the drawing board. But when they enthusiastically reach for more, I know I’ve struck gold. These Pesto Parmesan Sundried Tomato Tartlets were an undeniable hit, cementing their place as a go-to appetizer for future celebrations.

The Heart of the Flavor: Premium Ingredients for an Unforgettable Taste

The secret to truly outstanding appetizers often lies in the quality of your ingredients. For these tartlets, each component plays a crucial role in creating a harmonious and memorable flavor profile. Let’s dive into what makes each element shine.

Flaky Perfection: The Puff Pastry Foundation

Using frozen puff pastry sheets is an absolute game-changer, especially during busy holiday preparations. Not only are they incredibly convenient, saving you precious time in the kitchen, but they consistently deliver that coveted buttery, flaky texture that elevates any tartlet. Puff pastry, a classic French invention, is made by repeatedly folding butter into dough, creating hundreds of delicate layers that puff up beautifully when baked. For our tartlets, this results in a light, airy base that crumbles perfectly with every bite, providing a wonderful textural contrast to the creamy filling. Baking them in mini muffin tins ensures they are perfectly bite-sized, ideal for mingling at parties.

When working with puff pastry, remember to thaw it according to package directions, usually in the refrigerator overnight or at room temperature for about 30-40 minutes. Keep it chilled until ready to use, as warm pastry can be difficult to handle. A light dusting of flour on your work surface and rolling pin will prevent sticking. The golden-brown hue achieved in the oven is not just for looks; it indicates a perfectly cooked, crisp, and delicious shell ready to be filled.

The Soul of the Dish: Fresh Buitoni Pesto Sauce

The vibrant, aromatic pesto is undoubtedly the star of these tartlets. And for unparalleled fresh flavor without the fuss, I rely on Buitoni’s refrigerated Pesto with Basil. It’s a genuine time-saver that doesn’t compromise on quality, crafted with high-quality ingredients essential for a truly remarkable recipe. Buitoni’s Pesto with Basil draws inspiration from the Italian Riviera, blending fragrant basil, pungent garlic, delicate pine nuts, rich walnuts, and the sharp notes of aged Parmesan and Romano cheeses, all lovingly emulsified with extra virgin olive oil. Doesn’t that sound absolutely heavenly?

What I appreciate most about Buitoni is their commitment to quality and natural ingredients. All Buitoni sauces are made with no GMO ingredients and are free from artificial flavors and colors, giving you peace of mind as you savor their authentic taste. This dedication to natural goodness makes Buitoni Pesto my unwavering go-to choice, delivering a fresh flavor that simply can’t be matched by jarred alternatives.

You can easily find Buitoni’s fresh pasta sauces, including their pesto, in the refrigerated section of your local grocery store. I often spot mine along the perimeter aisles or near the deli, nestled among the artisanal cheeses. Stocking up on this pantry staple means you’re always just moments away from elevating your meals, whether it’s these tartlets, a quick pasta dish, or a gourmet sandwich.

Creamy Indulgence: The Cheese Blend

Nestled atop the luscious pesto layer is a delightfully creamy cheese filling. This mixture is a testament to how three simple cheeses can create a complex and utterly satisfying flavor. We combine softened cream cheese, which forms a smooth, rich base, with soft goat cheese, introducing a wonderfully distinctive tang and a subtle earthiness. Finally, Buitoni shredded Parmesan cheese is folded in, adding a sharp, nutty, and slightly salty dimension that perfectly balances the sweetness of the tomatoes and the richness of the pesto. Buitoni’s shredded Parmesan is another fantastic time-saver, offering convenience without sacrificing the authentic Italian flavor. This blend creates a velvety texture that melts in your mouth, making each tartlet an unforgettable experience.

Sweet & Tangy Brilliance: The Sundried Tomatoes

Crowning these exquisite tartlets are delicate ribbons of sweet sundried tomatoes. These intensely flavorful tomatoes, whether packed in oil or rehydrated, bring a concentrated burst of sweetness and a hint of tang that is crucial for balancing the rich, savory notes of the pesto and cheese. Their vibrant color also adds a beautiful visual appeal, making each tartlet a miniature work of art. The chewy texture of the sundried tomatoes provides yet another delightful contrast, tying all the components together into a symphony of flavors and textures.

The combination of flaky pastry, fresh pesto, creamy cheese, and sweet sundried tomatoes results in an appetizer that is truly off the charts in flavor. Each ingredient is carefully chosen to complement the others, creating a balanced and addictive bite.

Crafting Your Tartlets: Tips for Success

These tartlets are not just delicious; they are also surprisingly simple to assemble, making them ideal for entertaining. Here are a few tips to ensure your Pesto Parmesan Sundried Tomato Tartlets turn out perfectly every time:

  • Thaw Puff Pastry Properly: Ensure your puff pastry is thawed but still cold. This makes it easier to handle and cut without becoming sticky or losing its delicate layers.
  • Even Baking: Pressing the pastry squares firmly into the mini muffin tins helps them hold their shape and bake evenly. Don’t overfill the tins initially; leave room for the pesto and cheese mixture.
  • Egg Wash for Golden Glow: The egg wash isn’t just for shine; it helps the pastry achieve that beautiful golden-brown color and creates a slightly crispier crust.
  • Soften Cream Cheese & Goat Cheese: Make sure your cream cheese and goat cheese are properly softened to room temperature before mixing. This ensures a smooth, lump-free filling.
  • Sundried Tomato Preparation: If using oil-packed sundried tomatoes, drain them well to avoid excess oil in your tartlets. If using dry-packed, rehydrate them first in warm water or oil until tender, then pat them dry before slicing.
  • Make Ahead: You can bake the puff pastry shells ahead of time and store them in an airtight container for a day or two. The cheese mixture can also be prepared and refrigerated. Assemble the tartlets just before serving to keep the pastry crisp.
  • Serving Temperature: While delicious warm, these tartlets are also fantastic served at room temperature, making them perfect for a buffet-style appetizer spread.

With these tips in mind, you’ll be able to create a batch of these exquisite tartlets that look and taste like they came straight from a gourmet bakery, but with the heartfelt touch of homemade goodness.

Pesto Parmesan Sundried Tomato Tartlets

By: Melissa Stadler, Modern Honey
Pesto Parmesan Sundried Tomato Tartlets are made with flaky puff pastry baked until golden brown and filled with Buitoni fresh pesto sauce, parmesan goat cheese cream cheese layer, and topped with sweet sun-dried tomatoes.
Prep Time: 30 minutes
Cook Time: 18 minutes
Total Time: 48 minutes
Servings: 24

Ingredients

  • 1 – 17.3- ounce package Puff Pastry Sheets (2 sheets, thawed)
  • 1 Egg (for egg wash, whisked)
  • 7- ounce Buitoni Pesto with Basil
  • 8- ounce pkg. Cream Cheese (softened)
  • 4- ounce Soft Goat Cheese
  • 1/2 cup Buitoni Parmesan Cheese
  • 1/4 teaspoon Garlic Powder
  • 1/2 cup Sundried Tomatoes (in oil, sliced)

Instructions

  • Heat the oven to 375° degrees F (190°C).
  • Unfold the pastry sheet on a lightly floured surface. Cut each pastry sheet into 3 strips. Cut each pastry strip into 4 squares, making 12 squares per sheet. Gently press the pastry squares into (1 3/4-inch) mini muffin-pan cups.
  • In a small bowl, whisk one egg until well blended. Brush the puff pastry squares in the muffin tins with the egg wash.
  • Bake for 16 – 20 minutes or until the pastry shells are beautifully golden brown and puffed. Carefully remove the pastries from the pan and let them cool on a wire rack for 5 minutes.
  • While the pastry cools, prepare the cheese filling. In a mixing bowl, cream together the softened cream cheese and goat cheese for about 4 minutes until smooth and light. Add the Buitoni Parmesan cheese and garlic powder. Continue to cream for 1 more minute, scraping down the sides of the bowl to ensure everything is well combined.
  • To assemble, place a teaspoon of Buitoni pesto sauce into the bottom of each baked puff pastry tartlet. Top the pesto with a generous dollop of the parmesan cream cheese mixture. Finish each tartlet with a few delicate slices of sun-dried tomatoes.
