Why This Homemade Peanut Butter Cup Recipe is a Game-Changer

This recipe for Homemade Chocolate Peanut Butter Cups is incredibly straightforward, requiring only six simple ingredients that you likely already have stocked in your pantry. The ease of preparation, combined with the phenomenal results, makes this a go-to treat for any occasion.

My journey to perfecting these copycat Trader Joe’s peanut butter cups was significantly influenced by online candy-making classes I took through Craftsy. As a lifelong learner and an avid baker, I’m constantly seeking to expand my culinary knowledge. Elizabeth LaBau, the brilliant mind behind Sugar Hero, was the instructor, and her expertise is truly exceptional. She shared invaluable insights into confectionery, and I’m excited to pass on her ingenious techniques to all of you.

During her classes, Elizabeth delved into the art of making homemade chocolate peanut butter cups. Having faced prior disappointments with other recipes, I was eager to learn her method. And she certainly delivered, revealing the ultimate secret to creating chocolate peanut butter cups that taste just like the ones from your favorite store. Are you ready for it? The magic ingredient is finely crushed graham cracker crumbs! It sounds unconventional, but it brilliantly introduces a subtle texture that perfectly complements the creamy peanut butter, replicating that distinctive mouthfeel of high-end store-bought cups. Truly genius!

The Ultimate Test: A Daughter’s Approval

After whipping up a batch of these Chocolate Peanut Butter Cups, I was utterly amazed by their simplicity and, more importantly, how precisely they mirrored the taste and texture of Trader Joe’s peanut butter cups. The true validation came when my daughter returned home. She’s my fellow enthusiast when it comes to TJ’s peanut butter cups – a bag rarely survives our shopping trips. I decided to let her discover them naturally, without any prompting, to get her unadulterated opinion.

I was in my home office when I heard a resounding, “MOM!” I rushed in, concerned, only to find Sierra holding a sizable chocolate peanut butter cup, her eyes wide with delight. “Mom, these taste EXACTLY like Trader Joe’s! Did you make them?” Her enthusiastic confirmation solidified everything I believed about this recipe. The joy of finally being able to recreate such a beloved treat at home, with such authentic results, was truly exhilarating.

Mastering Homemade Chocolate Peanut Butter Cups: Step-by-Step Guide

  1.  Select High-Quality Chocolate: The foundation of an exceptional peanut butter cup is, without a doubt, the chocolate. For a smooth, beautifully melting shell that delivers on flavor, investing in premium chocolate is key. Brands like Trader Joe’s Pound Plus Bar (available in milk or dark chocolate, depending on your preference), Guittard, or Ghirardelli are excellent choices. If you’re looking for ultimate convenience in melting, Ghirardelli chocolate melting wafers or disks are a fantastic option. For a taste profile closer to a classic Reese’s copycat, consider using semi-sweet or milk chocolate.
  2. Perfect Your Chocolate Tempering Technique: Tempering chocolate is not just for professional chocolatiers; it’s an accessible and essential step for achieving that coveted glossy finish and satisfying “snap” in your chocolate shell. The good news is, you don’t need a fancy double-boiler. This technique can be easily accomplished using your microwave. Tempering simply involves carefully heating and cooling chocolate to stabilize its crystals, preventing bloom (the whitish streaks that can appear on untempered chocolate) and ensuring a professional-looking, delicious result.
  3. Craft the Chocolate Shell: Begin by placing miniature cupcake or muffin liners on a baking sheet. Using your perfectly tempered chocolate, brush a generous layer onto the bottom and up the sides of each liner. Ensure even coverage to create a sturdy and attractive base for your peanut butter cups. Allow these chocolate-lined cups to chill and set completely before moving on to the filling. This initial chilling period is crucial for a clean release later.
  4. Prepare the Irresistible Peanut Butter Filling: The heart of these cups is the creamy, flavorful peanut butter filling. This concoction is created by vigorously whipping together smooth peanut butter, softened butter, pure vanilla extract, powdered sugar, and the secret ingredient: finely crushed graham crackers. The graham crackers introduce a subtle crunch and a touch of sweetness that elevates the filling’s texture and flavor, making it truly stand out.
  5. Assemble and Seal: Once your chocolate shells are set, carefully spoon or pipe a dollop of the rich peanut butter filling into each lined cup, gently pressing it down to create an even layer. Leave a small amount of space at the top. Then, generously spoon more tempered chocolate over the filling, ensuring it completely covers the peanut butter and reaches the edges of the liner. Smooth out the top layer of chocolate for a polished finish.
  6. Chill to Perfection and Store: Allow your completed peanut butter cups to chill and set. You can do this at room temperature, which might take a bit longer, or in the refrigerator for a quicker set. Once firm, they are ready to enjoy! These delightful treats can be stored, covered, in the refrigerator for up to one month. For the best flavor and texture experience, bring them to room temperature before serving, or enjoy them slightly cold, depending on your personal preference.

Homemade Chocolate Peanut Butter Cups

By: Melissa Stadler, Modern Honey
Homemade Chocolate Peanut Butter Cups are made with high-quality chocolate and creamy peanut butter filling with a secret ingredient. Tastes even better than what you find in the store. How to make out-of-this-world chocolate peanut butter cups at home.
Prep Time: 20 minutes
Cook Time: 15 minutes
Total Time: 35 minutes
Servings: 20

Equipment

  • KitchenAid Mixer

Ingredients

  • 12 ounces High-Quality Chocolate Bar (Chocolate Chips or melting wafers, Milk or Semisweet, depending on preference)
  • 1 cup Creamy Peanut Butter
  • 3/4 cup Powdered Sugar
  • 2 Tablespoons Graham Cracker (finely crushed)
  • 1 teaspoon Pure Vanilla Extract
  • 2 Tablespoons Salted Butter, softened
  • 20 miniature muffin or cupcake liners (may use an assortment of sizes)

Instructions

  1. To temper the chocolate, begin by chopping the chocolate bar if using one. Place 1 1/2 cups of chocolate into a large microwave-safe bowl, reserving the remaining 1/2 cup.
  2. Microwave the chocolate at 50% power in 30-second intervals. Stir vigorously after each interval. Continue microwaving and stirring until the chocolate is completely melted and smooth.
  3. Once melted, add the reserved 1/2 cup of chocolate to the bowl. Stir frequently until all of this added chocolate has also completely melted, ensuring the mixture is smooth and evenly tempered.
  4. Arrange 20 foil miniature muffin liners on a baking sheet. Fill each liner about one-quarter full with the tempered chocolate. Using a pastry brush or clean paintbrush, brush the chocolate up the sides and around the bottom of each liner to create a uniform shell. Repeat for all liners.
  5. Allow the chocolate shells to set at room temperature for 15-20 minutes, or until firm.

Peanut Butter Filling:

  1. While the chocolate sets, prepare the peanut butter filling. In a large bowl, cream together the creamy peanut butter, powdered sugar, finely crushed graham crackers, vanilla extract, and softened butter. Beat for 4-5 minutes until the mixture is light and smooth.
  2. Once the chocolate in the liners has set, roll the peanut butter filling into small balls and place one in each chocolate shell. Lightly press down, leaving enough space for the top chocolate layer.
  3. Spoon more melted, tempered chocolate over the top of each peanut butter filling. Smooth out the chocolate layer to completely cover the cup. Allow the chocolate to set completely at room temperature. For faster results, you may place the cups in the refrigerator.
  4. Once the chocolate has fully set, carefully peel off the liners. Alternatively, you can leave the liners on for convenience.
  5. Store the finished chocolate peanut butter cups covered in the refrigerator or at room temperature. For optimal enjoyment, I prefer mine slightly chilled, but they are equally delicious served at room temperature.
