I am a sucker for a warm, fresh out of the oven almond croissant. I recently shared how to take a shortcut and make easy almond croissants at home using day old croissants and you all have loved that recipe!

Since the chocolate chip cookie croissant has gone so viral over TikTok and social media, I wanted to create my own version of the cookie croissant. Now, I love myself some carbs; however, the croissant and cookie dough seemed a little bit of an overload.

So I decided to take my easy almond croissant recipe and stuff it with a decadent chocolate bar to make the ultimate chocolate almond croissant. To say we fell in love with this chocolate croissant is an understatement.

Ingredients:

The beauty of these chocolate croissants is how easy they are to make since we start with already baked croissants.

  • Croissants — use your favorite butter bakery croissants. Stale, day old croissants are best, but you can make these with fresh croissants too. A shortcut for creating stale croissants is toasting them.
  • Butter — use good quality butter if at all possible for the almond filling.
  • Sugar — this recipe calls for granulated sugar.
  • Almond Flour — fine blanched almond flour can be found in the baking aisle at any grocery store.
  • Egg
  • Almond Extract — I like to use Nielsen-Massey almond extract.
  • Chocolate — See below for tips on what type of chocolate to use.
  • Powdered Sugar — to dust on the top of the almond croissants.
  • Sliced Almonds — to sprinkle on the top before baking.

Almond Simple Syrup:

For extra almond flavor, this is what you brush on the croissants to impart more almond into the chocolate almond croissants. If you don’t want as much almond flavor, use vanilla extract instead.

What chocolate to use in Chocolate Croissants?

For making chocolate croissants, you typically want to use chocolate that melts easily and has a rich flavor. Semi-sweet chocolate is a perfect pairing with the sweet almond filling. Here are some ideas:

  1. Chocolate bars: Choose high-quality dark chocolate bars. These will melt smoothly and provide a rich chocolate flavor without being overly sweet.
  2. Chocolate chips: Semi-sweet chocolate chips are convenient to use and melt easily. However, they may contain additives to help them keep their shape, so be sure to choose a high-quality brand.
  3. Chocolate batons: These are specifically designed for making croissants and other pastries. Chocolate batons are long, thin sticks of chocolate that are perfect for rolling into croissant dough.
  4. Chocolate spreads: Nutella or other chocolate spreads can also be used as a filling for chocolate croissants. Keep in mind that these spreads contain additional ingredients like sugar and oils, which can affect the sweetness.

How to make Almond Chocolate Croissants:

  • Make a simple syrup by placing the water and sugar in a microwave-safe bowl. Heat in the microwave for 90 seconds or until the sugar is completely dissolved. Stir in almond or vanilla extract. If you desire, you don’t have to add any flavorings and can brush the croissants with a plain simple syrup.
  • Make the Almond Filling: In a bowl, combine almond flour, softened butter, granulated sugar, egg, almond extract, and vanilla extract. Mix until well combined and smooth.
  • Slice the Croissants: Cut each croissant in half horizontally. This will create a pocket for the almond filling. Lightly brush the inside of each side of the croissant with simple syrup.

  • Fill the Croissants: Generously spread the almond filling on the bottom half of each croissant. Reserve a small amount of almond filling for the top of the croissants. Place chocolate on top of the almond filling. Place the top half of the croissant back on.
  • Top with Filling and Sliced Almonds: Spread a small amount of almond filling on the middle top of each croissant. Sprinkle sliced almonds over the top of each croissant, pressing them gently into the almond filling to make them stick while baking.

  • Bake: Place the filled croissants on a parchment paper lined baking sheet and bake in the preheated oven for 12-16 minutes or until the tops are golden brown.
  • Drizzle with Chocolateand Powdered Sugar: If so desired, melt some chocolate and drizzle on top of the croissants. Allow the almond croissants to cool slightly before dusting with powdered sugar for an extra touch of sweetness.

Where to buy Croissants?

I have tried so many different types of croissants when I was recipe testing my almond croissants and these chocolate almond croissants.

The croissants in these photos are from Costco and they are delicious. I have tried the ones from Sam’s Club and I prefer the ones from Costco Bakery. I have also tried the Private Selection Brand at Kroger store and while those are good, I still prefer the Costco croissants. Also, I have tried La Madeline bakery croissants and they were delicious.

Storage:

These are best eaten warm, fresh out of the oven, but can be stored in an airtight container at room temperature for several days. Just warm up in the oven or toaster oven to melt the chocolate again.
